Introducing Dana Chantler – Chef of the Year at the 2018 HM awards.

The HM Awards for Hotel Accommodation and Excellence were held on Friday 8th September at the International Convention Centre in Sydney. More than 700 industry leaders gathered for the 1920’s themed gala awards ceremony, celebrating the best properties, departments, people, chains and brands across Australia, New Zealand and the South Pacific.

Nominated along with 22 other highly respected and incredibly talented Chefs, Dana Chantler took out the honour as joint winner with Anna Polyviou from the Shangri-La in Sydney. Anna Polyviou is known as the Punk Princess of Pastry and has appeared on MasterChef for the last 3 seasons.

A well-respected colleague, Dana is known for his infectious laugh and friendly personality. Working alongside the team while training and sharing his knowledge, his approachable nature accentuates his level of skill both as a chef and as a leader.

On winning the award, Dana said “Co-winning this award with Anna Polyviou, and being a finalist in such a talented field is a massive honour. My team deserve credit for really buying in to what we’ve established in Seasalt over the last year, and of course my thanks goes to Executive Chef Simon Quick for always believing in me. This win highlights how serious we are at Seasalt and Crowne Plaza Terrigal Pacific about delivering great food experiences. ”

Dana first joined Crowne Plaza Terrigal Pacific in 2014 as Senior Sous Chef in Florida Beach Bar before moving up to Executive Sous Chef in Seasalt Restaurant in 2016.  

Seasalt Restaurant is located on Level 1 of Crowne Plaza Terrigal Pacific and it is known for fresh seasonal menus with a coastal influence and is famous amongst locals for the buffet breakfast. Favourites on the menu include the best-selling seafood platter, halloumi fries and a dessert share plate that makes lovers of sweets rejoice.

Dana’s influence on the Seasalt’s seasonal menus has ensured a focus on quality ingredients, sourcing of local produce and the showcasing of seafood. The style of the menu is modern Australian with Asian flavours along with American style slow-cook meals, influenced by Dana’s Canadian background.  

Dana’s top choices from the Spring 2018 menu are the smoked beef short ribs with charred cauliflower, marrow gratin and house made BBQ sauce and for dessert, the honeycomb with honey lavender labneh, spring berries and ginger lemon syrup.

In addition to Dana’s win, Crowne Plaza Terrigal Pacific was a finalist in a number of categories including Upscale Hotel, Conference and Events Property and Service to the Community. Human Resource Manager Jude Healey was a finalist in the category of Human Resources Associate and Marketing Manager Melinda McCrone was a finalist for Sales and Marketing Associate.
