Spring has officially sprung and we are celebrating with a Spring Fling Dinner with Manly Spirits Distillery Co! Experience an irresistible four course menu created by Executive Chef Simon Quick, paired with delicious cocktails featuring Manly Spirits Distillery Co spirits.

Taste your way through four courses:

Canape on arrival

Gin and lime marinated snapper fillet with cucumber ribbon, fresh dill , pickled mustard seeds and sea lettuce

Cocktail Pairing: It Came From the Sea
Australian Dry Gin, Adelaide Hills Dry Vermouth, Karkalla (Beach Banana), cucumber and Indian tonic


Poached blue eye cod fillet with buttered samphire, shaved cauliflower, basil oil and snow peas

Cocktail Pairing: Marine Velvet
Botanical Vodka Marine, Lychee Liqueur, cranberry juice, pomegranate seeds, lime wheel and basil leaves


Pork tenderloin with caramelised apples, mustard greens, old school crackling and brandy jus.

Cocktail Pairing: Pome Negroni
Cask No.2 Barrel Aged Gin, Montenegro Amaro, cold pressed apple juice and apple bitters


Bruleed Limoncello tart with Italian meringue, mascarpone, shaved biscotti and marinated raspberries

Cocktail Pairing: Zesty Sour
Manly Spirits Zesty Limoncello , Coastal Citrus Gin, passionfruit syrup, lemon juice and Angostura bitters
